Simple Lime Vinaigrette

An easy homemade lime vinaigrette dressing – perfect for any kale salad.

Equipment

  • small mason jar

Ingredients

  • 1/4 cup good quality olive oil**
  • 2 tbsp fresh lime juice
  • salt and pepper

Instructions

  • Pour olive oil into a small mason jar with a tight-fitting lid. Season with salt and pepper. Add 2 tbsp fresh lime juice. Seal the jar and shake well. Your done! This quantity is enough to dress 2 dinner salads.

Notes

This 5 minute lime vinaigrette pairs well with kale.  Try it on my Kale and Avocado Salad with Cashews, or Kale, Avocado and Coconut Granola Salad.
