
Here’s a simple and satisfying recipe for a Perfect Avocado Toast. A hearty slice of fresh sourdough bread gets buttered up and toasted first. Top with smashed avocado, cottage cheese and thick slab of juicy tomato. Finish with a sprinkle of salt in all the right places, a pinch of crushed red pepper, a squeeze of fresh lime juice and a drizzle of good olive oil. I seriously can’t wait to get out of bed to eat this.

Another Avocado Toast?
You probably already have a go-to recipe for your favorite avocado toast. Now you have mine too. 🥰
I am obsessed with the combination of cottage cheese, avocado and juicy tomato on this Perfect Avocado Toast. The salt, lime and olive oil make the magic happen.

The key is to salt the smashed avocado and give it a little squeeze of lime juice before layering on the rest of the ingredients. A second pinch of salt directly on the tomato is also key. Don’t skip the lime juice or crushed red pepper. They make this Perfect Avocado Toast more sophisticated.

Perfect Avocado Toast
You can make Perfect Avocado Toast with any bread obviously, but it really deserves a quality slice of sourdough or whatever other fresh artisanal loaf sucked you in last time you were at the grocery store.
It is so worth it to heat the grill pan and sear that buttery bread before you layer on the ingredients for Perfect Avocado Toast. Spread the bread slice with plenty of butter on one side and place face down on the hot pan. I weigh the bread down by putting another small saucepan on top.


Grill for about 4 minutes then flip and weigh it down again. There is enough residual butter on the pan to get the other side toasty. Give it 3 more minutes before removing and building your Perfect Avocado Toast.

Those of you who have a sandwich press can use that to achieve the same result.
Smashed Avocado
While your bread is grilling, cut open an avocado. Use one that is nice and ripe. You can either smash it with a fork on a cutting board or use my method. I just put a little salt and a squeeze of lime juice right onto one half and use a fork to crush it right in the skin. Transfer to the toast.
I opt to use a whole avocado for Perfect Avocado Toast because I hate saving a half for later. Feel free to just use half if a whole avocado scares you.
Avocado contributes a significant amount of the fat in this recipe, but the majority is healthy unsaturated or monosaturated fat. I say use the whole thing.


Salting the smashed avocado and squeezing a little lime juice directly on is one secret to the magic of my Perfect Avocado Toast.

Layer everything else on. Put the pinch of crushed red pepper on the cottage cheese layer. Finish with another small pinch of salt directly on the tomato plus another squeeze of fresh lime juice and a drizzle of olive oil to finish it off.

I made Perfect Avocado Toast this morning with a greenhouse-grown tomato that I got at the farmer’s market this weekend. It was good, but I can’t wait for ripe summer tomatoes.
Perfect Avocado Toast delivers 17g of protein which is a nice way to start the day, especially if your tummy was already rumbling when you woke up.

Equipment
- Grill pan optional
Ingredients
- 1 slice sourdough bread
- 1 tbsp butter
- 1 avocado
- salt and pepper
- 1/2 lime
- 1/4 cup cottage cheese
- pinch crushed red pepper
- 1 slice tomato
- 1 tsp extra virgin olive oil
Instructions
- Preheat a grill pan to medium-high heat. Butter one side of your sourdough bread (if your butter isn't soft enough to spread, microwave it for 15 seconds first). Once the pan is hot, place the bread butter-side down on the grill pan and place a small saucepan or skillet on top to weigh it down. Allow to grill for 3 minutes or until crispy and golden. Flip and replace the weight. Grill for 3 more minutes.
- Smash the avocado on a cutting board using a fork. Lightly salt the smashed avocado and squeeze a little lime juice on top. Transfer to the toasted bread. Add the cottage cheese and the pinch of crushed red pepper next. Add the tomato slice and lightly salt again. Finish with a squeeze of lime juice and a drizzle of good extra virgin olive oil. Serve.
