Perfect Avocado Toast

My version of the Perfect Avocado Toast. Butter and grill a piece of fresh artisanal sourdough bread and top with smashed avocado, cottage cheese and tomato. Salt, lime juice, crushed red pepper and olive oil make the magic happen.

Ingredients

  • 1 slice sourdough bread
  • 1 tbsp butter
  • 1 avocado
  • salt and pepper
  • 1/2 lime
  • 1/4 cup cottage cheese
  • pinch crushed red pepper
  • 1 slice tomato
  • 1 tsp extra virgin olive oil

Instructions

  • Preheat a grill pan to medium-high heat. Butter one side of your sourdough bread (if your butter isn't soft enough to spread, microwave it for 15 seconds first). Once the pan is hot, place the bread butter-side down on the grill pan and place a small saucepan or skillet on top to weigh it down. Allow to grill for 3 minutes or until crispy and golden. Flip and replace the weight. Grill for 3 more minutes.
  • Smash the avocado on a cutting board using a fork. Lightly salt the smashed avocado and squeeze a little lime juice on top. Transfer to the toasted bread. Add the cottage cheese and the pinch of crushed red pepper next. Add the tomato slice and lightly salt again. Finish with a squeeze of lime juice and a drizzle of good extra virgin olive oil. Serve.
