How are you doing on your New Year’s Reset and resolutions? I’m close to finishing my first book of the year. So far I’m also sticking to a 90% plant-based diet. I didn’t do a full “Veganuary” because I simply can’t give up cheese, but I did go 99.9% plant-based and loved it.

Blueberry Quinoa Salad with Halloumi is dressed with a mixture of champagne vinegar (sub white wine vinegar), lime juice, maple syrup and olive oil. It’s an easy dressing that goes with pretty much any salad.
The second recipe of the January Recipe Roundup is halloumi and snap pea salad with honey lime dressing. This is one of the freshest and most addictive recipes I’ve made and it also has a super easy and versatile dressing.
This dish might seem like it would be too light for the middle of winter but sometimes you need a break from heavy soups and stews. It will definitely be a staple meal when the hot days hit this summer.
