A simple, easy and delicious vegetarian sandwich - great to pack for a hike.
- 4 slices Cracker Barrel Vermont white sharp cheddar cheese
- hummus your favorite kind, I use roasted red pepper
- 2 slices rye or pumpernickel bread
- Lightly toast the bread.
- Spread pesto on one slide, hummus on the other, cheese in the middle.
This is a great easy sandwich but filling. Toasting the bread lightly helps keep it from getting soggy if you plan to pack it for a hike.
