Susan Spicer is best known in New Orleans for her flagship restaurant, Bayona. This cookbook features my favorite dish from that restaurant, Salmon with Choucroute and Gewurztraminer Sauce. A totally unexpected combination of salmon and sauerkraut with a luscious butter sauce…a date-worthy dinner for sure.

There are lots of other keeps in this cookbook. My favorites are:

  • Jalapeno-Roast Pork
  • Jalapeno-Roast Pork on Ciabatta with Pickled Cabbage and Creole Mustard
  • Barbecued Chicken Salad with Corn, Avocado and Creamy Poblano Dressing
  • Roasted Chicken with Olives, Lemon and Garlic

And if you are visiting New Orleans, I highly recommend a reservation at Bayona. It’s hidden in the French Quarter and not one you’ll hear about simply because it has been around so long. They have the BEST veal sweetbreads in the city and a menu that changes daily.
