Pesto, Hummus and Cheese Sandwich

A simple, easy and delicious vegetarian sandwich - great to pack for a hike.

  • 4 slices Cracker Barrel Vermont white sharp cheddar cheese
  • hummus your favorite kind, I use roasted red pepper
  • 2 slices rye or pumpernickel bread


  • Lightly toast the bread.
  • Spread pesto on one slide, hummus on the other, cheese in the middle.


This is a great easy sandwich but filling.  Toasting the bread lightly helps keep it from getting soggy if you plan to pack it for a hike.
